MX5 MK1, what product and stages?

So going to underseal my MX5, there is some surface rusting, nothing looks really bad, so I was thinking Deox-Gel, then clean that off then electrux and to seal it in was thinking epoxy mastic then dynax-ub.

Is the epoxy overkill or worth it?

As you said but without the Dynax on top,Epoxy is well worth,it will provide very good resistance to FOD.
